Lamb Chops with Garlic and Rosemary: A Simple BBQ Recipe

Prepare yourself for a delectable experience with perfectly cooked lamb chops. As you watch the orange flames dance from the BBQ, the tender lamb chops sizzle and release the enticing aroma of piney rosemary and the rich allure of buttery garlic. With our easy-to-follow recipe, you can make the tastiest chops that will take your BBQ game to new heights and leave you wanting more. Get ready for a mouthwatering journey that is sure to satisfy your taste buds.

Lamb has a unique and flavourful taste, with a subtle hint of game. Since most lambs are grass-fed, they have a delightful grassy and robust taste. Unlike beef, lamb has a texture that is both firm and tender, making it an excellent choice for a fancy dinner. However, to truly enhance the flavours of this exceptional meat, it’s equally crucial to understand the art of seasoning as it is to master the cooking itself. Pairing lamb with the right seasonings can bring out its finest qualities and enhance its natural goodness. The classic companions of garlic, rosemary, thyme, oregano, mint, basil, and sage harmonise beautifully with lamb’s distinct taste. For those looking for bolder flavours, explore the delightful tastes of coriander, cumin, cayenne, chilli powder, mustard powder, and paprika. And for those seeking a bittersweet allure, a simple brush of honey over the meat before cooking will add an interesting note.

Which Cut of Lamb Works Best for the BBQ?

For juicy tenderness, opt for the loin, rib, or sirloin chops. However, if you crave the shoulder or leg chops make sure you marinate them for the perfect tenderness. Seek chops that are approximately 2.54cm thick, light pink/red, finely textured and wonderfully marbled. Flavourful marbling should grace the entire chop, not just the exterior lump.

Creating the Perfect Marinade for Lamb Chops

For a delicious marinade, we recommend using a combination of olive oil, garlic, rosemary, salt, black pepper, and oregano. Mix all the ingredients together and spread the marinade generously over the lamb chops, making sure to coat both sides evenly. Cover the chops with plastic wrap and refrigerate for at least 1 hour, but no more than 24 hours, as the meat could become too soft. When you’re ready to grill the lamb chops, take them out of the fridge 30 minutes prior to cooking to let them reach room temperature.

Prepare the BBQ for Lamb Chops

Once you’ve finished marinating your lamb chops, it’s time to start grilling them. To prepare the lamb, start by preheating the grill to medium-high heat. The cooking process will be quick, taking only 4-5 minutes per side. Remember to flip the lamb only once. If you prefer medium-rare chops, aim for an internal temperature of 57°C. For well-done chops, aim for a temperature between 60°C – 70°C, but be careful not to overcook and dry out the meat. After grilling to your liking, let the chops rest under a foil cover for 5 minutes before serving.
