Which Cut of Lamb Works Best for the BBQ?

Seek chops that are approximately 2.54cm thick, light pink/red, finely textured and wonderfully marbled. Flavourful marbling should grace the entire chop, not just the exterior lump.

Creating the Perfect Marinade for Lamb Chops

For a delicious marinade, we recommend using a combination of olive oil, garlic, rosemary, salt, black pepper, and oregano. Mix all the ingredients together and spread the marinade generously over the lamb chops, making sure to coat both sides evenly. Cover the chops with plastic wrap and refrigerate for at least 1 hour, but no more than 24 hours, as the meat could become too soft. When you’re ready to grill the lamb chops, take them out of the fridge 30 minutes prior to cooking to let them reach room temperature.

Prepare the BBQ for Lamb Chops

Once you’ve finished marinating your lamb chops, it’s time to start grilling them. To prepare the lamb, start by preheating the grill to medium-high heat. The cooking process will be quick, taking only 4-5 minutes per side. Remember to flip the lamb only once. If you prefer medium-rare chops, aim for an internal temperature of 57°C. For well-done chops, aim for a temperature between 60°C – 70°C, but be careful not to overcook and dry out the meat. After grilling to your liking, let the chops rest under a foil cover for 5 minutes before serving.

  • 8 lamb chops
  • 4 tablespoons of extra virgin olive-oil
  • 4 cloves garlic minced
  • 1 tablespoon fresh rosemary chopped
  • 1 teaspoon fresh oregano chopped
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper


Step 1: Blend the olive oil, garlic, rosemary, oregano, salt and black pepper in a delectable marinade.

Step 2: Pour the marinade over the lamb chops ensuring both sides are thoroughly soaked. Cover them with plastic wrap and refrigerate for 1 hour.

Step 3: On the preheated grill sizzle the lamb chops for 10 minutes flipping once midway until they reach an internal temperature of 135°F (57°C).

Step 4: Wrap the chops in foil and let them rest for 5 minutes.
